Chef Gary Gladman has been working alongside owner Craig Smith since he took over the pub 26 years ago, earning several culinary awards along the way. At the heart of The Three Chimneys is its award-winning kitchen, where every dish is homemade and thoughtfully crafted using ingredients sourced from local farms and suppliers.
Committed to sustainability and supporting our community, we take pride in sourcing locally. This includes fresh, sustainably sourced fish from South Coast fisheries, working closely with day boats along the Kent and East Sussex coastline. This means the fish is caught daily, avoiding industrial freezing processes and minimising environmental impact, allowing us to serve you the freshest, most sustainably sourced fish.

While we love experimenting with seasonal ingredients throughout the year, there's something truly special about the arrival of Autumn and Winter when we fully embrace Game season. During this time, we showcase hearty, bold flavours by pairing game meats with the fruits and vegetables that thrive in these cooler months.
